What is chicken karahi?

Karahi names both the wide, curved cooking vessel and a family of quick-cooked dishes made in it. Pakistani versions vary by city and household. Many are tomato-forward and finished with ginger, green chilli and coriander.

Ingredient notes and substitutions

Use ripe tomatoes because they form the body of the masala. Bone-in chicken remains juicy during vigorous cooking. If using boneless meat, shorten the final cooking time. Ghee gives a rounder finish, while neutral oil keeps the tomato and ginger clearer.

Common mistakes

Do not add a large amount of water. Keep the pan uncovered while reducing tomatoes, and resist crowding a small saucepan. If the masala looks wet, cook it longer before adding garnish.

What to serve with it

Serve with naan, roti or plain basmati rice. A cool cucumber raita and sliced onions balance the heat without competing with the karahi.

Storage and reheating

Cool promptly and refrigerate in a covered container for up to three days. Reheat gently until piping hot, adding one spoon of water only if needed.

Can I remove the tomato skins?

Yes. Blanch and peel them first for a smoother masala, although it is not essential.

Can I make it less spicy?

Ingredients

Main

  • 1 kg Bone-in chicken, cut into pieces
  • 750 g Ripe tomatoes, roughly chopped
  • 4 tbsp Neutral oil or ghee

Masala

  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 1 tsp Salt
  • 1 tsp Crushed coriander
  • 1 tsp Cumin
  • 1 tsp Crushed black pepper

Garnish

  • 4 Green chillies, slit
  • 2 tbsp Julienned ginger
  • 0.5 cup Fresh coriander, chopped

Method

  1. Build the base. Heat the fat in a wide karahi over medium-high heat. Add the chicken and cook, turning, until the exterior loses its raw colour and begins to take on light golden patches.
  2. Cook the aromatics. Add ginger and garlic pastes. Stir for one minute, keeping them moving so they smell fragrant without catching.
  3. Reduce the tomatoes. Add tomatoes and salt. Cover for 8 minutes to soften, then uncover and cook over medium-high heat. Stir and press the tomatoes until their liquid reduces and the oil becomes visible at the edges.
  4. Bhuna the masala. Add crushed coriander, cumin and black pepper. Continue frying for 5 to 7 minutes. The masala should cling to the chicken rather than pool beneath it.
  5. Finish and rest. Add green chillies and half the ginger. Cook until the chicken is tender, adding only a small splash of water if the pan threatens to catch. Rest for 5 minutes and garnish with coriander and remaining ginger.
