New: the Tarka guide to better biryani rice

ABOUT THE PUBLICATION

Pakistani food, documented with care.

Tarka Tales documents Pakistani food through recipes, cooking techniques and stories from the country’s regional food traditions.

Why Tarka Tales exists

Pakistani food deserves useful, searchable documentation that respects both home knowledge and the needs of a first-time cook. We explain unfamiliar terms, show the visual cues behind a method and keep regional differences visible.

Editorial philosophy

We distinguish between documented context, practical guidance and personal preference. We do not flatten varied regional dishes into one claim of authenticity.

Recipe testing

Recipes are written with measured ingredients, clear equipment assumptions and observable cooking cues. Seed recipes in this development build are editorial demonstrations and require a final kitchen test before publication.

Photography and corrections

Photography should show the actual recipe and useful texture. We correct factual and method errors transparently.

Meet the editor

Tarka Tales is written and edited by Ayesha Iftikhar, an independent publication with no institutional affiliations claimed beyond the testing process described in the recipe testing policy.
