Rice recipes in Pakistani cooking are judged on one thing above all: whether the grains stay separate and fluffy instead of clumping into a mash. Chicken Biryani, layered with a spiced meat masala and partially cooked basmati then finished on low heat (dum), is the most demanding version of this — the rice has to absorb steam and aroma without turning soft. Chicken Pulao takes a gentler approach, cooking rice directly in a seasoned stock so the grains take on flavour more evenly but with a less intense spice layer than biryani. Basmati rice is used almost exclusively for both, chosen for its long grain and low starch content, which is what actually prevents the clumping most home cooks struggle with — rinsing the rice before cooking to remove surface starch matters as much as the cooking method itself. Sindh in particular has a strong biryani tradition, reflected in dishes like Sindhi Biryani, which leans tarter and spicier than Punjabi versions.
